Natalis
This fine dry mead has been aged for at least 3 months in an acacia barrel, after an initial maturation in glass.
Gentle notes of wood give this mead a lovely roundness.
You will see that all our meads are cloudy. We deliberately don't filter because it allows you to fully enjoy the flavor.
Natalis is a medieval word meaning "birth". For us, it's the birth of our semi-dry mead.
In addition, the word Natalis was transformed into French through several intermediate stages to become the better-known Noël (Christmas). If the feminine variant of this word is Noëlla, the name of the mother of our founders, without whom Alchymiae would never have been born, you'll understand why this name has a special significance for us.
There is also Saint Natalis from Ireland, specifically in the county of Ulster. He is a prominent figure in a story about werewolves.
