Quince mead

Dominicus is a melomel with quince. A melomel is a mead with fruit. Although somewhat less known to us, quince is very flavorful. Thus, this mead gets its unique flavor profile not only from the honey, but the addition of organically grown quince adds to its complexity. 

Quince is a bushy tree species from the rose family. It is a hard fruit that is rarely eaten as a table fruit here. However, the fruit when ripe is very aromatic and perfect for eating out of hand. The skin contains a lot of pectin and the fruit has little juice. In general, quince is mainly processed and jelly is made from it.

Story behind the name

Dominicus was named after one of the fathers in law of our founders. The saint of the same name, St. Dominic, was certainly not an impeccable figure. The founder of the Dominican order was involved in the very first crusades. He is the patron saint of astronomers and scientists.
